Ingredients
200 g firm tofu
2 medium tomatoes
150 g frozen hash browns
1 tbsp olive oil
1/2 tsp turmeric
1/4 tsp black salt (kala namak)
1/4 tsp ground black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
Salt to taste
Fresh parsley for garnish (optional)
Method
Crumble the firm tofu into small pieces using your hands or a fork
Heat olive oil in a large non-stick skillet over medium heat
Add the crumbled tofu to the skillet and sauté for 2-3 minutes
Sprinkle turmeric, black salt, black pepper, garlic powder, and onion powder over the tofu
Stir well to evenly coat the tofu with the spices and cook for another 5 minutes
In a separate pan, heat a little olive oil and cook the frozen hash browns according to package instructions until crispy
Slice the tomatoes in half horizontally
Heat a grill pan over medium heat and grill the tomato halves, cut side down, for about 3-4 minutes until lightly charred
