ANZAC Bites

This is a favourite snack of mine growing up in New Zealand. Hearty, chewy and delicious.

Ingredients

1 cup flour

1 cup sugar

150g butter

1 tspn baking soda

1 cup dessicated coconut

2 cups rolled oats

Pinch of salt

3 tbspns golden syrup

3 tbspns boiling water

Method

Heat oven to 180°C. Line a 30 x 20 x 5cm baking tin with baking paper.

Melt butter in a saucepan.

When melted add golden syrup. Stir through.

Put flour, sugar, coconut, salt, baking soda & oats into a bowl and stir through.

Pour melted butter / golden syrup mixture into the dry ingredients and gently combine.

If it’s too dry add a little bit of water or butter if you want a crispier version.

Pour into a baking dish and flatten out with the back of a spoon.

Bake for 15-20 mins or until the edges and top are nice and brown.

Cut while still warm & enjoy when cool.
